I found that using the canyon track on quick and easy gave me about 30-35 cars in a 3 lap race. And the track is a bit more interesting with the dam buster!

On average im getting more wrecks on Airport Graveyard than canyon,maybe because on canyon im holding off wrecking cars untill they get to the damn,see if we can get 9x wrecks again.Not sure how we did that when there are only 8 vehicles on the track

The fastest way to do this is to do Ferry Wharf. At the start, hang back until you have passed the first right hander. Make sure you have enough power at this point to trigger the small power play that explodes the gas silo. This should destroy anywhere from 4 to all 7 cars. After that just try to kill whoever is left and rinse and repeat until you have KO'ed 1000 opponents.
