Shoot any moving object with a triangle HUD marker; that's a Zylon Fighter. Repeat x99. You'll kill many hundred Zylon Fighters throughout the game; I got this sometime in the Sector 4A-C series.
Best tips are to use Attack Mode and the heat-seaking rockets, or Turret Mode and the guns.

Zylon Fighters are the basic enemy fighters you come up against, from the tutorial levels onwards. Just keep playing the game and you will eventually kill 100 fighters, it's not hard at all. You'll probably get it by the time you get to the 3rd sector.
