You will finally get Rank 3 for Mind Trick when you reach Mission 18 – Doomgiver Communications. As soon as you see Stormtroopers come at you, use Mind Trick on one of them, then the trophy will pop.

Again, this is technically missable if you don’t use Force Powers much, if at all. But, if you use Force Powers a lot, you most likely will unlock this naturally.
