At Fencing, block three attacks in a row, then score a point (Single Player, easy) but you can unlock this trophy in Career Mode as well as Single Discipline (easy).

As stated, simply parry 3 attacks in a row, and then land a blow to your opponent to score a point. See the Almost untouchable trophy for more info.
