I'll breakdown the easiest ways to win with each fighter:

(Muay Thai, Karate, Boxing, Kickboxing): Use a clinch (Press ) and knock your opponent down with 3 strikes. Then press to get on top of them, Press to get into full mount (Sitting on their chest) and then mash away with /.

(Submission Wrestling, BJJ, Judo, Wrestling, MMA): Hold and press with the left analogue stick towards your opponent to initiate a takedown or a throw (Depending on the discipline) from there, press and this will start a submission, wiggle the left stick to increase your submission bar, when it fills, you will injure your opponent. Rinse and repeat until you win.
