How to unlock the Gossip achievement in Syberia 2 - Definitive Guide
I believe there are only 3 characters you must go out of your way to talk to specifically (although two of them give you a conversation prompt but don'r respond with dialogue); all other counted 'talk-able' characters you will speak with during progression of the story.
These three missable 'mute' characters are:
- In Romansburg's Monastery; after riding the entrance elevator into the Monastery property, there is a mute monk to the left of the elevator. He is missable, and will be unavailable once you leave the Monastery with Hans.
- In Romansburg's Monastery; at the back of the cemetery is a mute grave-digging monk. He is missable, and will be unavailable once you sound the Monastery bell from the room next to the Patriarch's hall.
And the final missable character is:
- In Hans' dream, in the Voralberg residence living room, is Father Voralberg. He will leave the dream once you finish the clock puzzle at the base of the stairs.
If you'd like to keep a checklist, the full list of characters I talked to, both plot-related and the four above, are all listed below. Descriptions contain minor story spoilers. The achievement popped upon talking to the last person in the list below.
Thanks to hondasalem92, Sangriaz, and wildwest08 for info/suggestions.

How do you speak to the grave digger? I can't get a prompt.

Man, that sucks, I didn't have that issue.
If the order of events matters for when he's talkable, then I should mention that I think I used the order outlined in this guide: http://www.gamefaqs.com/pc/562371-syberia-ii/faqs/29669
In Syberia 1, I was unable to speak to a plot-important character though, and had to start my game over. :(
Good luck! Let me know if you resolve it, in case anyone has similar issues.

This guide was translated automatically.
This time everything is simpler, all the characters are plot characters (you just can’t chat with non-plot characters). Got it in a conversation with the elder Voralberg.
