The Empress of Light can be fought in a post-Plantera world by finding a Prismatic Lacewing in the Hallow surface between 7:30pm and 12am in-game time. From here, you can either catch it with a bug net for later use or slay it to immediately begin the fight.
This fight can be difficult, though I can confirm that the new Journey mode does still allow achievements to be unlocked, with the god mode setting making this much easier if you are willing to start a world from scratch.
The achievement did not pop for me when killing her during the enraged daytime phase, though this may have been a glitch. If you find yourself running out of time on journey mode, you can keep changing the time of day in the journey settings to give yourself an indefinite amount of time to whittle away at her health.
Edit: After some testing and confirmation from users YonderGrunt and AKAGreenway, it seems that this achievement may only unlock for the host of the world.

First time I killed the Empress of Light the achievement did not pop. It popped right after my second kill, so either a delayed unlock or perhaps the first kill might not count. With a battle potion and Zenith to kill her quickly I was able to get 5 kills in one night, Battle Potion and/or water candle seems to be really helpful for this.

Tried this with my friend on each other’s worlds it has only popped on YOUR own respective world. It was for us at least

The Empress of Light is a tough boss (up there with Moon Lord). You summon her by going to any Hallow biome in your world after 7:30pm and killing a Prismatic Lacewing (they show up on the surface). Your best bet though is to catch it with the bug net and then stashing it in a chest.
Save/Exit. Upload your saves to the cloud. Reload the game, take the Pristmatic Lacewing, release it (in the Hallow Surface area) and kill it.
Empress is actually super easy to kill if you have the Zenith Sword (the one from the other DLC trophy set). It's a super quick battle. Trophy pops right away.

She cannot be fought until Plantera has been defeated. I would advise creating a long arena, making sure you have plenty of room for verticality, and an accessory that allows for faster ascent, such as the Frog Leg. I personally would refrain from using infinite flight mounts since the attacks are fired in large spreads and in rapid succession, which can leave the player vulnerable. As for weapons, pick whatever you think is strongest. My personal choices (as a melee user) were a mix between the Flairon and the Terra Blade.
And pray to god daytime doesn't roll around...
