Just to clarify, this isn't something that is missable if you are playing through the campaign. The only level that has the bird is the final stage (level 12).
As part of the level, you will hop into a cannon that fires you up to the bird. Firing from the cannon and grabbing the bird are all automatic. You do have to press
to be released from the bird to continue the level (once you are over the appropriate area, or course).
