Play with American League All-stars and face the 1 star mexican team, on a 3 inning game, i won 4-0 and bunted after the 1st innings.

Easiest way to do this...

Teams are allowed 4 Created players on the roster. So create 4 players all with 1 star stats. Put them on any team. Now, look through other teams rosters for players who have 1-2 star stats on contact/power, and trade all the good players off that team for the other crappy players. You can do this for Pitchers too.

Now play a 3 inning game on Super Hard difficulty. The CPU will still crush the ball with a mistake pitch in the wheelhouse. But they also still strike out easy with Perfect timed pitches.

If you want, also you can trade some really good players on too your team to make it a little easier to get at least 1 run in the 3 innings.

Play with an All-Star team against the worst ranked team (I think its the Pirates) you should be able to do it no problem.

For anyone that wants to get this without taking the time to make created players and what not, another extremely easy way to do this is in Become A Legend mode.

In Season 2, you get to face the Detroit Tigers. I don't know if it changes based on team. If it does, then this is assuming your team you picked was the Red Sox.

Detroit has a game where you are up 6 to 0 in the Bottom of the 5th inning. By using Daisuke Matsuzaka, you should be able to easily get 3 outs without them scoring 6 runs. If they some how manage to get 6 runs, just restart. It isn't like it is a long game.
