The Cursed Crusade

This maneuver is taught to you at the Tournament of Ecry, and during training the moves do count toward the achievement. While this can be obtained through natural play it's much easier to do during tournament tutorial, as the attacker will keep kicking at you instead of striking you. My first time through the game I only had a dozen instances where they tried to kick, and most of the time you forget to dodge it because it doesn't happen as often as deflecting a strike.

For clarification, this is the move where you tap B when the enemy lights up orange, dodging back from his kick. Instead of exiting the tutorial after 3 by hitting RB, just keep dodging his kicks till the achievement pops.
