This can be done before you even start the game. Just go to the leftmost arcade machine and play the race. Beat it in under 46 seconds for the gold.

I found the it was easy to do this on the Beach Bummin' level when you unlock it...

30 seconds is the gold time, but it is really simple to follow and execute...

Pay attention to when the jumps are made, especially on the first crevice and the jump off the long wall near the end!

Just beat one challenge with a gold medal on the blue arcade machine in Fancy Pants house. You can do this right after starting the game because the first race will already be unlocked.
