Set the games difficulty to Easy, then go to Arcade.
Select Athena as your first character, make sure to only use her through all of Arcade Mode, if you lose a round and use another character on your team you will need to restart. Don't retry rounds when given the opportunity.
As for the actual fighting, I was able to win with her fairly easily by choosing Simple commands and holding away from the enemies and using the punch buttons. Athena will shoot a ball of energy across the stage.
