The simplest way I found to get this achievement is to do Gerlinde Jäger's side missions, of which there are 10.
Once you get given the tenth mission, you are told to go to Schonfeldt Bunkers and harvest the albino fallow deer.
Simply set a waypoint on the Schondfeldt Bunkers landmark and head off towards it, and you should find the albino fallow deer close to that area (that's where I found it anyway).
Shoot and harvest the deer and, bloop, achievement unlocked.

Yes, an albino deer can show up randomly. They are EXTREMELY rare though. One of the other solutions talks about finding an albino red deer randomly

I have found a couple albino deer but was only able to kill one. They are extremely rare, but don't let that scare you. Check areas where you have seen Red Deer on the German map. I have only seen albino red deer (not Roe deer).
Once you find one, be extremely quiet because trust me, you don't want to scare it off. Take the time to slow your heart rate down. When you're ready, squeeze the trigger. Aim for the heart or lungs to take it down faster. Once that's done, approach the blood trail and follow it.

Near Shofeldt Bunkers, aproach from one of the nearest safehouse, the deer is located on top on one of the bunkers, easy to take down from the distance with one shot to the lungs. Hope it helps.
If for any reason you miss the shot just go to main menu so it will restart the mission as long as the deer does not received a shot.
