There are twelve (12) moose and eight (8) Reindeer antlers around the map, for a total of 20 sheds. The achievement unlocked for me after collecting 18 but I did confirm there are 19 on the map.

I was curious and tried something with an alternate account that might work (and you keep your original save). You need to own the game and be able to play offline. Here is what I tried:
1. Played to create an original save (just went to observation tower to get some xp).
2. Quit game and under "Saved Data," deleted console save only for profile.
3. Put Xbox in offline mode.
4. Started game again (will have to start a new game since local save is gone). Your original save is still in the cloud.
5. I killed an animal for Leave No Animal Behind achievement. The achievement did not unlock b/c I was in offline mode.
6. Went back online and started the game. The game asked which save I wanted, so I chose my original cloud one. My achievement unlocked in the menu, even though I technically got it offline in a "new" save.
This might theoretically work for the collectible achievements too. You could test with a set of collectibles. Try collecting them offline in a new save (in one sitting), then go back online and make sure to choose your original cloud save.

Thanks for the great guide! The achievement didn't pop for me after I collected them all. I even went though several to recheck that I collected them. Then I restarted a new game and it popped after I collected the first one, so I was happy I didn't have to go through them all.
