I didn't knew this was also a spot to get it , unfortunately it didn't unlock for me after shooting it ( even before I saw this solution) On the other side , rodeoing and extracting the core from a Titan and thus destroying it also didn't work for me. After my hard playthrough I will try this way to get it on the easier difficulty as with some collectibles.

Just noting, I also unlocked this by accident - if you happen to be jumping out of your titan as an enemy titan takes it's final bit of damage and explodes you will unlock this.

Great solution - I couldn't seem to unlock it rodeoing. For clarification, might want to have it say chapter 3 instead of checkpoint 3.

Upvoted from me. For some reason during the actual campaign I couldn't get this to unlock even after killing 2 Titans as the pilot. But this worked for me on my sweep up. Cheers.

Yep editing it to call it chapter 3 would be good too.

All I did was start Blood and Rust, held X to get out of my Titan, and machine gunned one of the enemy Titans that was already at low health.

Mission 3: Blood and Rust
Recommended Difficulty: Easy

Near the very beginning, you'll encounter a battle against other titans. Disembark your titan, and then rodeo an enemy titan to pull out the core and grenade it. Keep doing this over and over until it explodes to unlock the achievement.

This can be done on Mission 3, "Blood and Rust". This was recorded on Easy difficulty. All you need to do is exit your titan and jump onto an enemy titan for "Cowboy Up". Continue doing this until you kill an enemy titan for "You Can Be My Wingman". You can reload the checkpoint if you are unsuccessful.

Best place to do this is in Mission 3 "Blood and Rust", there will be a building which has an "Anti-Titan" rocket launcher in it(you will have to exit your titan to be able to access the building). Make sure you hold on to it, continue through the level until you encounter a group of two titans in a sludge pit(Be careful not to disembark on top of the sludge, as it will kill you), kill one of them, and then weaken the other one til it has very little health left, then disembark on land, get out your anti-titan rocket launcher and aim at the enemy titan until you get a lock-on, then fire away and that should destroy the enemy titan and land you the achievement, be careful though as you only get three rockets, so you'd better not waste any of them.

My very suggested way to unlock this achievement is to do this along side of the "Cowboy Up" achievement.
To do this you have to shoot a titan until near death part of health bar of the enemy titan, then disembark of your titan jump to the head of the enemy titan and do a rodeo attack. after this you'll unlock two achievement;
Thanks

Just like it sounds, you must land the killing blow to an enemy Titan on foot with your own weaponry instead of BT. This is not as insane as it sounds. At any point in the game where you find yourself down to a 1 on 1 with a titan, try to chip their health down as low as possible with either the starting loadout or the Tone core. Then while they are hopefully stunned from your last shot, disembark and unload on them. A shotgun or grenades are your best bet from close range. If you die but it's still destroyed, it still counts.

I cannot confirm or not if a rodeo kill counts for this

To kill a Titan as a pilot in the campaign, you'll need to rodeo it multiple times. The first time, you'll take out a battery, and then any subsequent time you rodeo it you'll drop a grenade in that hole to do damage.

There is also a very easy way to get this during Chapter 5 when you get the next titan loadout. There is a titan in a rack against the wall that counts for the achievement.

Mission Select: Blood and Rust

This trophy can only be done as a Pilot and you'll need to destroy an enemy Titan. This can be done virtually anywhere as long as there is enemy Titans for you to destroy. The first opportunity to obtain this trophy is during Mission 3: Blood and Rust, where you need to keep Lt. Shaver and Lt. Freeborn alive. This is at the very start of the mission and you will, of course, encounter enemy Titans.

Before engaging the enemy Titan in battle, disembark from BT by holding , and simply jump on top of the enemy Titan with . You will do an animation where you remove the enemy Titan's Battery. This is what you call rodeoing an enemy Titan, which will unlock the Cowboy Up trophy for doing so. Do this rodeo about 1-2 more times and eventually the final animations will be of you throwing a live grenade into the enemy Titan's Battery slot. Destroying the enemy Titan and unlock the trophy for doing so.

We begin the battle with the usual titanium enemies. We bring his condition to critical. Then we get out and shoot at him with whatever the pilot has at his disposal (preferably something larger in caliber, such as a grenade launcher or RPU), and throw grenades. If you don’t get it right away, it’s convenient to complete mission 3 “Blood and Rust” at the beginning.

The easiest way to do this trophy is in Mission 5: Effect and Cause .
In the Hangar, just before the end of the level, there is a titan hanging, blow it up and that's it.

It is enough to ride him when he has critical HP.
At the same time we will get an achievement for the rodeo

After you receive the time-changing gadget, leaving the building back to BT-7274, go to the gate behind which there are robots and 2 titans and calmly destroy the titan through the bars on the right or left side, the trophy is yours)
