How to unlock the The Gold Standard achievement in UFC Personal Trainer - Definitive Guide
The description is just for exercises. Complete all trainer specific exercises and general exercises on Beginner, Intermediate and Advanced. This does not count activities Free Strike, Speed Bag, Tire Flip or Hit-the-Mitts. You can manually change your intensity level under Player Tracker->Personal->Fitness Test and increase/decrease as needed.
Just create a custom workout from the Main Menu and load up 10 individual exercises. Finish, rinse, repeat until complete. Don't forget to readjust your Fitness Level afterwards if needed.

Yes. Custom Workouts allow adding 10 activities but will all run at your current difficulty setting.
For example: Fitness Test difficulty set at Beginner, create a workout and add the first 10 Mark DellaGrotte moves (jab, cross, etc.) then complete the workout. You'll get a bronze medal for each.
Afterwards manually adjust your Fitness Test difficulty to Intermediate, redo the same 10 exercises and get silver medals. Do the same on Advanced difficulty.
Your best bet is to only bump the difficulty for Intermediate/Advanced then switch back to Beginner for the actual workouts for the Training Plans as you'll get the bronze medals while working on these.
