Obviously no quick way of getting this, along as your getting one or two every few serves they will quickly build up as you go through your world tour, arcade and online achievements.
For it to count as a max the power bar must be stopped at the top which will make the bar fully red and MAX will appear above it.
With practice you should beable to stop the bar near the max on a regular basis and if you can do that then the max serves will start coming to you on a regular basis.
If you'd like to check to see how many you've got so far go onto the main menu and click on 'my club' and then on medals, on here it keeps stats on everything to do with your achievements.

Does anybody know if those fault max serves count or not?

the only way to find that out is to look at how many you've gotten before your game and then the next game count your aces and obviously the fault one if you get one and then go back to stats after the game and see how many have been added

To hit a max serve to need to wait until your serve power meter is at its maximum. Use
