I could only get these restrictive achievements to work by deleting all save data and starting fresh as if I was playing the game for the first time. It seems that the game remembers things you've done that void achievements, even when starting a 'new game' from the menus or going onto New Game+.

Vegetarian and Carnivore register whether items flagged as meat are consumed, Vegetarian is voided if any meat is consumed, Carnivore is voided if anything non-meat is consumed.

Someone on PSNP mentioned that they reloaded from the menu instead of quitting the app completely upon making a mistake, and this ultimately voided the achievement (trophy). I once ate a flower when trying to dump it from my inventory. I then immediately quit the app to go back to my latest save. Got the achievement at the end. Just FYI.

Have the developers said whether or not they plan to fix these achievements? Takes all the fun out of exploring and upgrading if I have to start completely over each time.....

You will have to delete your save file for this & several other achievements because of the way the game saves data.
As a side note, food does not spoil on the ground, or on drying racks, so dont pick it up until you need it.
There is however another possibility... Glitching... You can just sail to the exit from the start of the chapter & wall jump up the wall to exit. After watching the Any% speedrun for this (which uses a wall jump glitch with an increased framerate) I was able to pull it off on console, but it will require above average mashing skills, specific angles, & a bit of luck.
