The easiest way to get this Trophy is to use the Pause button. Whenever the AI shoots, pause the game, look where the disc is going, and intercept. Unfortunately the AI is a huge pain that doesn't like to let you score, so matches might get decided by timeout a lot. But just focus on an unstoppable defense and you should win based on the two or three times the AI "accidentally" let the disc slip by.

Also, when it comes to pausing, be careful of the actual Pause Menu. The "Quit" option has no confirmation prompt, and will instantly end your game if you press X on it. I recommend not using X to roll/shoot in the game, at least while you work on this Trophy. The Square button does the same thing, and won't trigger any menu options. Also, Circle will close the Pause Menu, so there's no need to press X on "Resume". After you start the game, never press X again, and you should be safe from all accidents.
