You will play in the UK Championship during the Snooker career mode and does not require you to be ranked in the top 16/32 players so you will play it during your first season. Once you've progressed far enough to play it, simply win.
If your having trouble winning, you can use the 'Cheat win' cheat code. To enable it, simply go to the main menu and type in Y B Y X B Y to enable cheats (you will hear an audible ping when entered correctly), and then X Y B X B X Y Y X B. Then when you go to start a new game, you will be given the option of winning the game without actually playing.
