These are the hunting side missions you get in the remote mountain village which you unlock during part 2 Chapter 3.
Sometimes temporary characters can be seen in the village and talking to them activates the side missions (usually requesting an item found whilst hunting).
I keep hold of at least 2 of each item and sell everything else (each animal pelt/each animal meat/antlers/bear fat/bear bile) to minimise the amount of hunting you need to as most side missions are item requests.
Try completing more main hunting missions/finishing current side quests if no-one is giving quests in the village (they only appear in the main area by the stream).
There are 20 side missions total but only 5 are required for this achievement so it is easy to earn.

In part two after breaking out of prison you'll end up in a small hunters village and most of what's there revolves around hunting.
This trophy is to bring certain items in your inventory to the trader by the white truck and he'll pay thrice the value as well.
Each request in order:
1. Marlen pelt (spelling?)
2. Fox pelt
3. Deer meat
4. Deer meat again but also antlers and deer hide
5. Bear meat, bear bile and bear pelt
As long as you have all the items you can give them one after another if you want by starting up a new conversation with him each time, just note that they have to be in your inventory.
