How to unlock the Veteran Driver achievement in Yakuza 5 Remastered - Definitive Guide
Taxi missions start in chapter 2 of Kiryu's story. SAVE OFTEN!!!! There are three kinds of missions:
Driving
You need to follow the rules of the road through narrow streets. The missions are timed. You fail if you run out of time, lose too many points, or (in the case of the mission "Tail that Car") get too close or too far from the car you're tailing. If you fail, do NOT view the results screen. The fail will stick and you WILL NOT get to retry the mission.
Conversation
This is just talking to passengers. Sometimes you end up in a race or a fight if you do it right. If you still need the achievement at this point (I doubt it), for "Flight of Fancy", make sure you've upgraded your taxi. You need to hold a lead for 90 seconds. It's not hard with an upgraded taxi.
Race
I found this easy. I only lost like twice because of mistakes I made. Just beat your opponent to win. A couple races end in fights.
For a complete breakdown of what kinds of missions you're dealing with, or even what to say during conversation missions, I found CyricZ's guide:

I don't know if they do or not, but I included it because it's included in the missions list.

Can be done at Kiryu's workplace soon after starting the game, chapter 3 or so.
Just talk to the woman in front of the doors and if you really want to drive as little as possible or complete this faster the last three selectable taxi missions are normally missions where you simply pick what to say to your passengers.
You're supposed to pick the best answers for a tip and more car points after completion but even if you skip through it all I think it's impossible to actually fail these.
