Zumba Attack is a multiplayer option. In this mode players take turns in being rated by the game. When you are being rated your character will be Green, Orange, or Red, when not being rated You will be grey. Simply get a higher score (based on accuracy) Than your opponent.
From what I can see, Zumba attack is a local multiplayer mode only, and not available on xbox live

This is not working. My wife sits out a few turns and I get to stage 5 vs her getting to stage 4, yet she gets more points at the end.

For this you will need 2 PS3 wand controllers. Zumba attack is really player vs player local co op. You enter a song and go head to head against the second player for a better score. Just calibrate both wands, set one aside, and do your work out. It doesn't matter which player wins, because the trophy will pop after the work out.
