You learn attacks by blocking a similar attack from an opponent and by performing an ideal (i.e., without hitting your masked face) evasion, absorption, parrying, and special attack (depending on your fighting style). You can also learn the attack if you dodge it with a dash at exactly the moment of it. And it’s worth saying that in fair PvP battles this is much easier to do.
