You will get this with time.
There is the pirate ships that you can fight (at least 8 of them), plus the patrolling guards that are on the islands (fairies, banana guards, banana pirates, the Fire Kingdom guards, those weird things that look like sugar cubes).

This is a cumulative trophy that counts the number of solitary targets you've killed. In the Evil Forest, you will start finding some dual-type enemies that can hit twice per turn. This still counts as one enemy (I believe, might need confirmation?). If you fight everything that you see outside of obvious threats that will kill you, you should get this during the Evil Forest.
