If we didn't finish the side quests, can we reload and complete them?

Here's the answer. After you "Pull the plug" you can continue playing the game as before. I just completed this quest the other day, and when I loaded the game back up, it was if nothing had changed. I'm now working on the rest of the achievements.

Got 36/38 achievements, this hasn't popped angry

Edit: had a couple people message me about this comment - unfortunately, I had to play through the game again from the start to get this to pop.

The final cutscene takes awhile to load, took almost 5min on my Xbox 1X

Give it time, or you’ll close the game out like me, the mission will glitch, & it’s another play-through

This one didn't unlock for me either which worried me. But after quickly speed running through the main story and ignoring everything else this did ping when it was supposed to along with the final achievement.

After defeating Gumbald, the story marker will appear near Mushroom Island. Go here and it will prompt you whether you wish to pull the plug, as doing so will end your ocean adventure. This will be rewarded to you during the loading screen.

Story related and cannot be missed.

Once you've finished the final boss battle (Sweet Victory), you will be tasked to pull the plug. Jump back on your ship and sail back to Mushroom Island. Just north of Mushroom Island, you will find a red buoy. Sail up to it, say “yes!”, and enjoy both your trophy and the game's ending.
