I used Wardlow (he can take a few punches etc before getting gassed) just focus on heavy strikes and quick grapples

I did too, used my CAW which I haven't upgraded, absolute steamrolling. Easiest 40 GS ever.

To unlock Elite difficulty you need to finish Road to Elite

You can use anyone, but if you have unlocked Paul Wight during Road To Elite, he is practically invulnerable to everything. Best bet is to use him against a CAW as their stats are low.
Pretty sure you can use just about anyone but I unlocked the female referee as a fighter (from the in game store) and set the match up against her. I guess she’s rated pretty low cause the match was all one way traffic.

Elite difficulty is the highest difficulty setting in the game and can be a little tricky, though if you play as a strong wrestler (Kenny Omega, Bryan Danielson, CM Punk etc) against weaker wrestlers (freshly created ones, Lance Archer, Kris Statlander, etc) it's not so bad. Beat on your opponent being wary that you're more likely to be countered than usual and be prepared to counter your opponents moves to regain control of the match. If you're one of the better characters you should build momentum fast and finish the match without much issue.
