How to unlock the Bounty Hunter achievement in Age of Empires II: Definitive Edition - Definitive Guide
This is the second mission in the Thoros (Armenian) campaign. The main scenario goal is to kill or convert five Byzantine generals.
Gameplay isn't too tough. At the beginning, you have to choose between your two brothers to play as your ally. I chose Mleh, who focuses on economy and will send you resources. During the mission, I didn't bother to build any buildings except a few fortified churches (for the submission, building them near the neutral villagers gives you occasional resources). The Byzantines will occasionally attack with pretty small forces. You start with a castle and a number of tower, so as long as you have some cavalry for rams you'll be fine.
Do a standard economy. I recruited five monks, a couple warrior priests, and about twenty Champions and twenty Composite Bowman. You can get away with less. Get your Barracks and Blacksmith researches done, and you'll slice through the pretty meager opposition. You can build more troops as you go, or if you spot batches of wounded Armenians (orange team) you can heal them with your monks and priests and recruit them for free.
Your goals are going to be the cluster of blue enemies around the map. Each group is a Byzantine General and an escort. If you send your monks in to convert a general, their escort will attack but the General itself should flee. So you just need to protect your monks with your main army, be patient, and the conversion is easy enough.
This didn't pop for me until the end of the mission. Once you convert three, you're fine to kill or convert two more to finish the game.

One additional tip--when you approach the General and his escort, set your troops not to attack so that they don't accidentally kill the General you're trying to convert. While your monks are trying to convert the General, you can attack individual members of the escort. As soon as the General's converted, set your troops back to free attack and clear out the rest of the escort. You will likely lose a few monks and other troops, but as long as your economy (with or without Mleh) is robust, you can always train more.
In only one of the five fights with a General did he attempt to flee (and he actually just rode around in circles!). In the other four, he was right in the center of the melee (and I accidentally killed the first, which prompted me to add this tip).
