This will definitely come over time if you play through the campaigns. There are a lot of missions with enemy castles in them.
With that said, if you just want to knock it out as fast as possible, destroy your own castles via attack ground.
Set up a random map, post imperial age, infinite resources.
Build a second town center and then spam villagers until you have 30 or so queued. Send them to build enough houses to reach 50ish pop, then build 10 castles.
Once you have all your castles built, build a few siege workshops, queue a bunch of Onagers/Mangonels. Now save the game! Once you've saved, order your Onagers/Mangonels to attack ground on your castles until you've destroyed all of them. Resign, return to map, open the menu, reload your game, repeat four more times.

This will come naturally throughout the game, however it can be boosted in random map games by building some mangonels/onagers and having them attack ground on your own castles to destroy them if you wish to attain it sooner.
