Age of Empires II: Definitive Edition

To obtain this achievement, play a round of skirmish. All you have to do is to play as the Poles and construct Folwarks, aka mills. Make sure the farms built are next to the Folwarks. Once the villagers start farming, you should have this achievement in no time.

My skirmish settings are below:

Game Mode: Random Map
AI Difficulty Easiest
Resources: Infinite
Game Speed: Fast

Advanced Settings: Turbo Mode

I think it unlocks when 500 food has been collected by the Folwark's special ability, not when 500 food has been gathered at the farms.

Skirmish, random map with the following changes from the default settings:
civilisation Poles
location islands
map size small
ai difficulty easiest
resources infinite
game speed fast
reveal map all visible
starting age post-imperial
allow cheats no

Once started:
create 10 more villagers
use a villager to build a Folwark with enough space for 8 farms immediately next to it
build 8 farms with 8 villagers
use another villager to build a Folwark with enough space for 5 farms immediately next to it
build 5 farms with 5 villagers

The achievement should unlock when the 13th farm is built. The Folwark's special ability means it immedately gets 8% of the food from a farm, which is 40 per farm, so when 13 have been built, it'll have collected 520 this way. I assume auto-reseeding the farm works for this as a new farm is being built. Farming does not contribute, I'd collected way more than 500 before the achievement unlocked.
