I had the same concern about my allies taking out the enemies too early and just built a wall southwest of my base so that they couldn't get out of their area without boats, which they never built.

Amass 10 Condottieri, 10 Genoese Crossbowmen, and 10 Bombard Cannon in the fifth Dracula mission "The Night Falls".
This is a simple enough achievement, but painstakingly longer than it has to be. Play the mission as normal until you get your settlement with a Town Centre. When you explore the immediate area, you will find some Italian Mercenaries who offer the Condottieri and Genoese Crossbowmen. You can purchase them with gold by clicking on either the Barracks or Archery Range respectively. They will keep coming out until you click on something else or run out of gold. This part is simple and quick.
What isn't quick is the Craftsman who builds Bombard Cannons for you once you have transferred them 1000 food. He produces one Bombard Cannon approximately every bazillion years and you need to wait until you have 10 for the achievement to trigger. The only thing to beware of is finishing off your enemies too soon. As long as you leave your last enemy (Purple) alive until you have it, you'll be fine.

Play through the level until you get your town centre, once you do you will note near by there is a craftsman to the west who will create bombard cannons for you once you provide him with 1000 food. He takes time to make these so keep them safe at the back of your base. To the north of your base is the Italian village. By clicking on the archery range and barracks you will buy Genoese Crossbowmen and Condottieri, respectively. Once you have your bombard cannons, buy 10 of each and the achievement will unlock.
