After the battle at the start spam build vils at each of your 3 TCs - aim for around 40-45. Get a strong eco going.
Create monks to heal your army then raid the southern section of the map, there will be a light blue village there that will give you resources when you kill them. Also, there are two light blue outposts to the left of the map in the mountains.
After healing your army once again, raid dark blue to the right of the map, destroying their docks will gift you gold.
Now, while this is happening build 2-3 castles and spam trebs (12 or so) make sure you pick up the unique tech from the castle (Timurid Siegecraft) that gives them 1+ range as well as Siege Engineers from the university for another 1+ range. Also, fill out the ranks in your army with extra cav units.
Now, onto Delhi - there are three castles around the outer wall, one just north of the central gate and the last one at the top of the map. The trebs should have no problem taking them out while your army of cavs defeat any units the AI might send your way.
I managed to do this with 45 minutes left on the timer with this method so it's really not as bad as it sounds.

On standard difficulty this is actually really easy.
Indeed build up an eco. And do build monks to heal your troops. And raid the west-south of the map, you'll find light blue here as well as two relics (inside monasteries). After that you can still raid the east side of the map that is blue, still with the initial force, after healing of course.
Then I just build 1 castle in front of green he is in the north of the map. And just build a lot of trebs and rams and pike men and cav archer and Keshik and light cav.
I still had 45 minutes on the timer left and the scenario ends when the last, that is the fifth castle drops. All in all quite easy i.m.o. especially since you can do so much with your initial army and having 40 minutes left of spare time to finish the job to kill all the castles. Nowhere near as pressed for time as this achievement:

Anyone worried about this achievement, don't be. 54 minutes left for me, you have SO much extra time.

Although timed, this achievement is easy (unless you're really slacking). After winning your initial fight, you can explore the map with your remaining troops, whilst having the longer term goal of boosting your economy and obtaining Trebuchets.
Once you have a decent amount of Trebuchets with a large supporting force, head to Delhi and start aiming for their Castles. Two of them can be destroyed from outside the walls of Delhi, so it's best to do that first and then move in for the remaining two Castles once you've mopped up some of their troops that they try and counter you with.
Unless you take an insanely long time doing this, the achievement is very much obtainable on your first try.

Caramel, Cardinal
Probably the easiest timed achievement. At the start, move all your army forward to try and keep as much alive after the battle as possible. Once the battle is over, take your remaining cavalry south to take out the enemy base, then west to take out the monasteries and finally if it's still large enough to the east to take out the larger enemy base. If not, train some more troops, and meanwhile, build your economy quickly (you start with a lot of villagers so this should be easy). Advance to the imperial age and build a large number of trebuchets (10-15) then with your main army defending them go on the attack against Dehli, take out the castles from distance and breech open the main wall. I completed this with over 50 min left on the clock so there's plenty of time to spare and it's actually almost impossible to miss this.
