In order to build stone structures with an infantry unit as the Delhi Sultanate you must select the Compound of the Defender defensive landmark when you advance from the Feudal Age (Age II) to the Castle Age (Age III).

- Use the spearman to then build a stone wall, stone wall gate, and stone wall tower.

Great solution! Only note is that there is no need for any enemies, you can do it by yourself on the map.
