This achievement, along with the other A.I. difficulty achievements can be unlocked fairly easily by winning a skirmish match by wonder victory with the following settings:

The High-Human Hero achievement in Age of Empires IV: Anniversary Edition worth 80 pointsWin a 1v1 match against the Hard A.I.
The Par-Human Potentate achievement in Age of Empires IV: Anniversary Edition worth 28 pointsWin a 1v1 match against the Intermediate A.I.
The Sub-Human Subduer achievement in Age of Empires IV: Anniversary Edition worth 11 pointsWin a 1v1 match against the Easy A.I.
The By Fortune achievement in Age of Empires IV: Anniversary Edition worth 14 pointsAchieve a Wonder Victory.
If you do not build any walls you can also unlock:

Map Options:Map Size: Gigantic
- Immediately start building your wonder with your starting villagers.
- Keep making villagers at your town center to work on the wonder.
- Once the wonder is built you will have to defend it for 15 minutes. Use this time and the remaining resources to build an army in case the A.I. attacks you.
- Because of the selected map (which are islands) the A.I. should not even get the chance to attack you.
Winning a match like this will also unlock the following achievements:- Keep making villagers at your town center to work on the wonder.

I was able to get all of the 1v1 achievements by starting a 8 player match and setting myself and 6 Hardest AIs against 1 opponent. Did Easy by accident. Next game did 5 teammates vs an intermediate and Hard and they popped. Then did 7v1 on Hardest for the last one. Just started the game and let my teammates run over the enemy.
