Simply win a match as the Byzantines.
The common quick ways of achieving this are:
1) 1v1 against an easy AI - rush the enemy for Landmarks Victory
2) Team up with Absurd Difficulty AIs against 1x easy AI - rush the enemy for Landmarks Victory or wait for the AIs on your team to do it for you (if you just truly want to let the game play itself as it generally takes longer for the AI to go for an early kill than it would for you to do it yourself).
3) Use Multiplayer Boost strategy - both load into the game, one player surrenders to boost the other.

I unlocked this playing as english when i built their feudal landmark..
