Just wanted to post this here if anyone ends up in the same situation as me. Spent the entire game through to look for a "Hut Upgrade" blueprint only to find out that it's not the actual name of the blueprint.

You upgrade your Hut using the "House Blueprint".

You can get the House Blueprint from:
- The Mechanic in Sunset Hills will give it to you after completing the Water Cave quest (where you find the Water Cave for the Mirrows to build their submarine pen).
- The Blueprint printer under the Drone Factory in the Earth City Ruins or the one in the Colony Space Station.
