Using a pistol or any firearm for that matter is satisfying no doubt, but using one at all for any part of a mission negates this trophy so simply complete any mission using any other means and you'll pop this one.

As the description says, complete one level without using your gun. It is not known if drawing your weapon counts as using it, but to be on the safe side, don’t even equip your gun at all.
This can easily be done on Level 1, ‘Ghosts of the Past.’ Refer to “Once Upon a Time” for a video on how to get this and five other achievements in the first level.
