The achievement description may be a bit deceiving.
While it is true that you cannot fail a level, restart a level (to prevent losing), or back out to level selection (to prevent losing), you are absolutely allowed to win a stage (scoring 90% or more) and then REPLAY the stage after victory.
So, you can pick a level that you can confidently beat consistently, beat it, replay the stage, and keep going until you reach the 30 victories. Also works for the 5 and 10 'levels in one go' achievements.
