For this Achievement you need to Launch 5000 birds which goes faster then you think. It's cumulative so you don't have to do this in one sitting. You can check how many you have under Options - Statistics

Is this something that will take extra grinding or will I probably finish this while playing through the game?

You will unlock this by playing through the game. For me this was the 20th achievement that popped.

This is very simple, just launch those bad boys while going for other achievements. You can keep track of your progress in the Options - Statistics main menu.
