Start a new game and continue through the tutorial until you reach the area with the four flame animal statues. Save at the telephone here, in case something goes wrong you can just reload your save.

Right from the start of the game, you'll start noticing decently large squirrels. They run away when you get close, and don't serve any real purpose that I'm aware of. What this achievement requires you to do is sneak up behind one and get close enough to steal its nut. This is highly missable because there are only a set number of squirrels in the game (probably six or seven), and most are impossible to sneak up on, to my knowledge.
Thankfully, there is one squirrel seemingly set up specifically for this achievement, and it can be done less than 10 minutes into a new game, especially if you know where you're going. After starting the game, you'll progress out of the starting area, grab the map in a chest, and take a ladder up into the main hub room with all four big animal statues. Head right one screen, up the ladder, then continue right. As you progress right from room to room, you'll see a squirrel above you in one room, looking down from above. Don't worry - you can't scare it aware from down below. Progress past it all the way to the rightmost room where you can collect a key from a chest. Head back to the left, platform up the yellow platformed stairs, and unlock the door, which is behind the squirrel.
IMPORTANT: Once you have access to the squirrel, you need to sneak very slowly to not startle it. Title the left thumbstick to the left just barely enough for you to start moving, and hold it there until you're close enough to the squirrel that you get a prompt to press
to "take." Do so to take the squirrel's nut and unlock this achievement (and get a bunch of bonus health (temporarily).
