Goals can be found anytime in the PDA pause menu, with each game having a different set. Each has between 3 and 6 goals at varying difficulties. I personally found Woodgal JR, Hustler, UFO Assault, Zombat 2, Video Hockey, and Attack Vector some of the easiest to complete in the early-mid game progression.
