This achievement is for Winning an online 25-player match and picking up every Item capsule along the way.
This is NOT for picking up one of every TYPE of item capsule and then winning the match. You must pick up EVERY single item capsule that drops in the match. Item Capsules will stop dropping when you reach the final four participants left in the match. Also, you must defeat the boss to register a Win. You cannot just come in first place and lose the boss battle.
I found this achievement even more difficult than the one for picking up NO item-capsules.
The absolute best tip I can give for this, is to practice hitting the ball with the edge of your paddle. (Almost running into it, instead of catching it). This will help keep the ball elevated longer and keep your score higher.
Also make sure to grab as many of the orb items as possible. Not only will they help bother or distract the other players, but they also are worth 500 points each.
