I used Ariana and just focused on short range weapons amd i got the Travel Boots trinket aswell just so it was easier to run away from the boss

Despite not needing to survive as long as the infinite stages, these achievements are still challenging, especially this one on Shrine III. The challenge with these is that you need to be strong enough to survive, but you also need to intentionally keep the boss alive until you reach the time mentioned in the description. This is the hard part: striking a balance between destroying everything but not destroying the boss.

What you absolutely need to avoid are any weapons that target random enemies or cover the entire screen: Mystical Firecrackers, Storm Javelin, Crawling Root, Cupid's Arrow, Blood Wing, etc. Even Magical Staff can decide to target the boss and do a lot of damage to it.

What you need are focused attacks. You want localized and/or controllable attacks that you can intentionally direct away from the boss while you avoid it for multiple minutes, still clearing enemies. As a result, ideal weapons are:
 
  • Wolf's Fang
  • Necromancer Gauntlets
  • Toxic Stench
  • Volcanic Orbs
  • Serrated Spears (evolved version with Silver Bullet below is amazing for pushing through crowds)
  • Spectral Dagger
  • Sparksword
Or any others that stay around you, or only shoot in a set direction/the direction you're facing.

As for trinkets, the my usual go-to ones are still the best here:
 
  • Forbidden Sword (you still want to do significant damage to the mobs)
  • Silver Bullet (basically a requirement to knock enemies back so you can push through to stay away from the boss)
  • Shackles (extremely helpful, especially on Shrine III, for slowing down the boss and all enemies, making it easier to stay away)
  • Leather Bracers (great to help push enemies back)
If you have Shackles, movement speed won't be an issue, and you shouldn't need to waste a spot on Travel Boots. Bosses don't move fast in general.

Before attempting any of these, definitely have Damage and Experience upgraded to 10, and I also recommend having Luck at least 5 or 6. I did all of these challenges with Selina because she starts with the Gauntlets and has the best survivability, in my opinion, with her passive Thorns and heal ability to help in a pinch. Immediately go from enemy to enemy to level up as fast as possible, and try to take out as many optional bosses as possible. Luck helps get more chest drops, and get more rewards from chests. You'll want to have you build set up and solid before the boss comes, because especially on Shrine III, you need to survive for 8 minutes after the boss appears. Once the boss shows up, it's important not to run away too fast or it'll just respawn somewhere else, and throw off your whole rhythm. Instead, slowly and methodically push your way through enemies, keeping the boss just out of reach of your attacks (and just off screen, if need be). In Forge and Shrine, do zigzags to avoid the boss attacks as you slowly walk away from them. This also gives you more time to push through enemies. With enough knockback, damage isn't really that big of a deal since you can just keep pushing enemies away and don't need to worry whether they actually die of not.

I'm not sure if it was RNG and I got lucky, or it's set this way, but the good news about Shrine III is that, from when the boss spawns at 20 minutes until the 28-minute mark for this achievement, none of those big fast guys that charge at you spawned, at least for me. This made it not bad at all to survive, since it was just tons of small enemies to push back. Just be careful of ninjas that can spawn right on top of you or next to you from jumping out of nowhere, as they can still do pretty decent damage to you. And, of course, beware of the silver fortune doll cats that shoot those large balls at you. They are absurdly tanky at the end of a run, and they aren't even worth trying to kill because you'll just get hit by their balls over and over while you wait for them to take forever to die. Instead, just run away or hide behind some building or obstruction so the balls can't hit you.

As soon as the clock reaches the time mentioned in the achievement description, immediately go to town on the boss and finish it off so you don't lose the run after making it that far.
