Stars are earned by completing each of the stage-specific objectives that are presented to you on the stage selection screen. As noted in the roadmap, even though when you play a stage for the first time you're only given one objective, which is to complete the stage, you can still complete the other two objectives despite not being shown what they are. This will save you time on doing unnecessary runs of stages multiple times. Simply search the achievement list for the applicable stage, because every stage-specific objectives has an achievement of the same name. For example, when you get to Glacier II, search the achievement list for "Glacier II" to see that you need to evolve the Necromancer Gauntlets and complete the stage with the War Drums as one of your trinkets. This is helpful for knocking out multiple objectives in a single run of each stage.
There are a total of 50 stars in the game (10 per stage, and five stages total), and while this achievement only requires 30, you'll need to earn all 50 for all other achievements. This is because every objective that gives you a star has an achievement tied to it, so you'll be earning all 50 stars for all achievements. You can therefore refer to each corresponding achievement for any stars you might be stuck on. My experience, though, was that I was able to continually approach stages in a relatively simple order of whichever one was the next easiest, as indicated by the Rank in number of skulls. I never had any problems completing objectives. Worst case, separate them out and go for them specifically. For example, if there's a star for reaching Level 30 with a specific character, realize that that doesn't require you to beat the stage, just to hit Level 30. As a result, you can get trinkets that boost experience gain and whatnot, rather than strictly damage or defense, because it ultimately doesn't matter if you can survive the later waves, it just matters that you level up quickly.
