These power-up achievements are all cumulative across all stages, even if you die. Power-ups that are available will be shown with onscreen markers, and you can also view their locations on your map (once you unlock it). In general, you likely won't have to go out of your way for any of these, as you'll be stumbling across power-ups continually during every stage.
