To Melee an enemie, just walk till you are near him, and then pull the right tricker.
Best done on easy setting for obvious reasons.

Afghanistan on recruit the bit after you co-op snipe the gas tank, once your done reload the checkpoint and do it again until you've get the achievement. Make sure you put the AI in passive hold position at the back of the map.
