To unlock you will need to spend 5 minutes in the air with your car. The total counts across modes, cars etc and adds up all the seconds spent in jumps, airs and falling off cliffs.
No need to unlock separately as you will probably get it just by going through Career mode. For me it unlocked about halfway through the Career, somewhere around the end of Group 4, the third out of 6 groups.

Mine popped halfway through group 3. I had completed the first collectibles map as well.

Just focusing on career races mine popped close to halfway through group b.
