For those of you who get the majority of your wickets with run outs and bowl outs, the catches will come less naturally.
In order to force the ball to hit a glove or bat and be caught, I found the best method to be using a 2nd controller for the batter and a fast/medium bowler for the achievement earner.
With the second controller move the batter across to cover the stumps.
The achievement earner will want to set up fielders in the slips positions to cover all small knicks and touches of the bat. With the bowler, send a "Short ball" down the wicket, (Bouncers work too, but you are limited to 2 an over and after the two any others are No Balls and will result in no wicket) then with the secondary controller try and time a late hit, Either
or 
. Late timing will result in either you punching the ball or clipping it, doing so with this timing will send the ball either straight up for a reflex catch 
& or straight to a fielder for an auto catch.
It may take a few attempts to get, but it will pop immediately upon the third catch.

Just an addition to the excellent solution above, if whilst batting you aim behind you at the wicket keeper your batsman will naturally try to pop it over his head. Once i started doing this i got 3 catches in 4 balls

This trophy should pop during game play, as the AI will give lots of a chances for your team to catch the ball. Set Easy Fielding to give yourself the best chance of success. Continue to bowl a variety of balls, then eventually the AI will hit the ball in the air. with these fielding settings, the AI will automatically catch the ball for you too. Three of these will get your trophy.
