The only way to do a barrel roll is to go off the curved ramps that make you do them automatically. Each course typically has at least one of these ramps to launch from. In general, you should always use these ramps because barrel rolls give you a ton of nitro. You will be doing hundreds and hundreds of barrel rolls throughout your time with this game so this will unlock very early.
