To unlock this achievement you need to complete the Olympic questline. You begin this questline during Episode 7 when you meet the two Spartan kings. One of them tasks you with escorting the Spartan Olympic champion, Testikles to the Olympic games during the quest 'Delivering a Champion'. This goes awry, naturally and you end up taking his place. The next quest is called 'The Contender' and begins as soon as you take over as Sparta's champion. You can follow this immediately, even though there are side quests that now appear in the Valley of Olympia, they aren't necessary for this questline.
First you will go to the Pankration trainer and after a chat will have two fights. Win these, then you're going investigating with the new quest 'The Long Game'. Once this is done, it's time for your final Pankration fight against the reigning champion, Doreias. Beat him then after the ensuing cutscene the achievement will unlock.
